- Virgin coconut oil for greasing
- 2½ cups blanched almond flour
- ¼ cup cocoa powder
- 1 tsp baking soda
- ¾ tsp salt
- ¾ cup pure maple syrup
- 3 large eggs
Ganache Ingredients
- ¼ cup full-fat coconut milk
- 2 oz unsweetened chocolate
- 2 tbsp maple syrup
- ⅛ tsp salt
Instructions
- Preheat oven to 350°F (177°C). Grease and line a 9-inch pan.
- Whisk almond flour, cocoa, baking soda and salt. Add maple syrup and eggs and mix until smooth.
- Pour batter into pan, level and bake for 25 minutes. Cool fully.
- Heat ganache ingredients together until melted and glossy.
- Spread over cooled cake and refrigerate until set.
